Priziac, en breton Prizieg, est attesté pour la première fois connue en 818 dans les Preuves de Dom Morice sous la forme latine Brisiaci sylva ; cette forme ancienne du toponyme rappelant la présence d'une forêt, sans doute d'importance remarquable. Ces mêmes Preuves nous découvrent un Prisiac, eleemosina en 1160 nous indiquant qu'aumônes et aides aux pauvres y sont de rigueur, et que nous retrouverons en 1161 avec un Prisciah puis un Prisiac en 1191. Alors que l'année 1330 nous laisse lire un Parrochia plebis Prisiac puis Presiac en 1376. Les archives du Rohan-Guéméné nous font connaître un Prissiac en 1430.

Les toponymistes, dont Ernest Nègre, feraient dériver ce toponyme d'un anthroponyme romain Brisaeus, ce qui alors indiquerait un toponyme d'origine gallo-romain.
