Le Sarzhav - prononcé Sarzao, n'a subi, comme de nombreux toponymes francisés, qu'une simple écriture version langue française. Ce toponyme Sarzeau est attesté en 1260 dans les archives des Trinitaires de la presqu'île de Rhuys et nous l'y retrouvons sous forme identique à cette forme française. L'année 1341 nous présente un Sarzau qui sera régulier dans les siècles.

Ce toponyme reste énigmatique et nous ne pouvons que remarquer la présence proche de toponymes avec un Arz - Ours comme Arzano ou des toponymes de communes proches comme Arz et Arzon.

En 1790, la commune de Sarzeau fut renommée Ville de Rhuys pour mieux retrouver son toponyme originel ultérieurement.
