Guillac, en breton Gilieg, est attesté en 834 dans le cartulaire de Redon sous la forme Giliac - Giliac Plebs. On le retrouve sous des formes proches: Gillac en 851, Guillac en 870, Gilac en 895, Gilac en 1118 dans les archives du Prieuré de Saint-Martin. Il nous est dévoilé sous la forme Glac au XVI° siècle.

Comme beaucoup de toponymes en -ac, celui de la commune de Guillac trouve son origine dans l'existence d'un domaine rural gallo-romain dont le propriétaire devait être un certain Guillus dont nous ne savons rien.
