Bey est attesté en 968 dans cette phrase en latin: In pago Lugdunenesi, in agro Beto, in villa Crusilias, dans un recueil de chartes de Cluny. Le cartulaire de Saint Vincent de Mâcon nous fait découvrir un Bex en l'an 998. Les masures de l'abbaye de l'Île Barbe nous font aussi connaître un Beo en l'an 971.

Les chartes de Cluny nous indiquent que Bey était un fond de terres, une division territoriale, l'Ager dépendant du district de Lyon. Ernest Nègre fait dériver ce toponyme de l'anthroponyme germanique Berio.
