Adissan, en occitan Adiçan est cité pour la première fois connue en 1323 dans le rôle des dîmes de la cathédrale de Béziers sous la forme latine Deyssano - Rector de Deyssano. Dans ce même rôle nous retrouvons Adissan en 1536 dans la phrase Villa cum ecclesia S. Adriani de Adissano.

Ce toponyme semble dériver du gentilice romain Aticianus ou Atittianus ; sans doute le propriétaire originel d'un domaine agricole gallo-romain présent en ces lieux et semblant correspondre à l'emplacement du village actuel.
