Nous n'avons pas retrouvé de formes anciennes pour Gresse-en-Vercors qui, sur les cartes des cassini, apparaît sous un simple Greße, le double S noté avec un ß. Nous pouvons, par contre, utiliser ce toponyme que l'on retrouve en 1273 à Mévouillon, dans la Drôme avec un Gressia en 1270.

Il semblerait que ce toponyme dérive du mot occitan greso, terrain stérile, ou du mot Greysou, graveleux, qui est plein de gravier. Ce sens toponymique est conforté par un passage citant Les graviers de Gresse, au-dessus de Vif en 1588.

    Ce toponyme est sans rapport avec les fruits. Il désigne une fromagerie de montagne, lieu où les éleveurs mettaient leur lait en commun pour les transformer en fromages.
